Mmmm leftovers never tasted so good! Smoked, bacon wrapped beef brisket served with home made horseradish cream sauce, a bowl of Aju dippin sauce, carmalized onions and chipotles cooked with the meat while browning, and steamed cabbage.... with a side of balsamic marinaded fresh cucumbers! And a COLD BEER.... Life is good.

Thank you old friend! Yes finally able to actually gain a little weight as of about 6 months ago. Finally off the Ensure and Boost drinks and on a strictly solid food (and soups) diet and I love it. Actually have my quarterly Cancer screening tomorrow at 2:15 PM so please keep me in your thoughts. It always makes me nervous as shit goin in that hospital. :-/

Dinner tonight was... Huge 1.25" thick Ribeyes, blackened in cast iron, heavily spiced with Cajun Spice/garlic/red pepper, fried to a crisp outside, just hitting med rare inside, smoked up the whole house... Momma Bear is not happy, but she'll get over it. Carmelized onions, butter/sourcream laced baked potato & Ceasar salad. For dessert, a big slab of Almond Bark

Beans or no beans, I'm cool with it. Beef...ground or grilled and cubed, pork,...even enjoyed chicken or turkey.... NOT a fan of sausage in it, and PLEASE don't put no damned CORN in it!!!

Got a few really good chili recipe books, and online faves, some really good ones on here even, including yours! I'm pretty open minded where cookin is concered, and chili is somethin easy to experiment and try different things with. I've been in chili cookoffs where the "judges" were so damn dfar all over the place it's ridiculous to try and stick to any serious traditional chili genres... Unlike BBQ, I can enjoy all different regional and imaginative recipes with ch...
