Bake or boil with whatever seasoning you prefer, chop up and use a good ham salad recipe, replaceing the ham with your vension heart (of course). Chill it down and enjoy,..yum,..I do wild turkey legs that way. Takes some time to pick out the meat after I"ve crock potted it but worth the trouble,..Yum,..

i always slice it up and dip it in whisked egg and flip it in flour and fry it in butter

We pickle them every year, seal the jars and stick them in the canning cellar. First day of deer season the following year they are opened, sliced and eaten cold for luck in the hunt. This is not quite as cool as the "Red Dawn" scene, but it is a long-standing family ritual. Friends and younger family members seem to appreciate the initiation into the clan.
