It is twisted for more than one reason. The extra length of the spring wires that makes the coils means the wires will need to be thicker as well as longer to achieve the same tension,thicker is stronger and longer means fewer degrees of twist so less fatigue. In addition the twisted wires can still function with one or more breaks. As an added benefit, the binding between the coils provides dampening of the force on the spring - the hammer and indirectly the bolt carrier. Since it is a military spring it is heavy enough to work on hard primers and still work with a break or two. Not "perfection" by any means, but "good enough".
