One of my favorite molecules - an excellent alternative to oleoresin capsicum when you want some heat in your food. That is the heat in horseradish, wasabi, and a few other things - AITC or allyl isothiocyanate. How 'bout a tough one Indy? Actually, found a good one, might be a toughy. To be fair that last one was tough, but I eat a fair amount of wasabi, and have read up on it - OC tends to give me heartburn, AITC generally doesn't. My wasabi intake is always accompanied by rice and raw fish. Figured out that molecule yet? I'm about to head to bed, if you or someone else gets it, don't let my absence hold up the game.
