Venison backstrap medallions are almost done defrosting in the fridge.

 

Breakfast maybe, steak-n-eggs?

Or maybe lunch, fresh chiles/tomatoes from the garden with onions & garlic?

 

Dinner will be seafood in Orange Beach, AL before we hit the Boston/Kansas concert.

All my venison came out medium or just a tad under medium.
Some fresh Jalapenos from the garden cooked in the grease for some added zing.

Not exactly heart healthy, but so dagblasted good, I can indulge once in awhile.

I considered adding an egg or two, sunny side up of course, but I had to use the internet for my picture, camera battery needed charging. Cold chocolate milk also. Can't wait to go back to work.

When at Waffle House I always order the same thing. Two eggs over medium, bacon, hash browns and wheat toast. Eggs get mixed with hash browns. Grape jelly and bacon on the toast for a sweet and salty follow up

TACO SALAD! YUM!

 

Mine's made this way, in layers:

1 flour tortilla

1 layer corn tortilla chips

refries with salsa, cayenne powder, and habanero sauce  added

seasoned ground beef

sharp cheddar

sliced jalapenos

 

Nuke the above to melt the cheese, then top with a generous sprinkling of cayenne, lettuce, diced tomato, and jalapeno slices.

 

 

...it was GREAT!...but I got a little carried away with the habanero sauce...

Brunch-

 

Bacon, potatoes, onions and jalapenos covered in scrambled eggs and cheese, all fried in the bacon fat. Seasoned with some cayenne and maybe some habanero.

El Yucateca is my favorite brand of hot sauce.

Their XXX is great, I try to keep the XXX, Roja & Verde in the fridge at all times.

I want to try, but cant find locally, their Caribbean & Chipolte flavors.

Last time I was at a Waffle House was in Kentucky with my little brother and his wife.

 

We played the weirdest stuff they had on the jukebox and watched the cute little gal behind the counter

shake her butt to the music while she made our breakfast.   :)

 

Food was good too as I remember.

 

Brother says the Waffle House locations closed in his area.   :(

LUNCH!

 

Whole pomps, gutted, washed, dried.
Sea salt, garlic powder, lime juice and olive oil, generously covered inside & out.
Wrap in aluminum foil and grill over high heat for 10-15min per side depending on size of fish.
Skin peels right off and the meat lifts off the bones.
One of the most delicious fish in the Gulf.

Filleted Blues
Dip fillets in egg wash, dredge in seasoned flour
Fry till golden and flaky
Quit listening to people who say Blues are trash.

Dinner will be 3 pepper chicken with sour cream gravy. Hopefully the pics post. Ill be the first to admit it looks like a pile of vomit with fried brain, but its dang tasty. The pepper heats it up real good and the sour cream and cream of chicken soup smooth it out nicely. One of my favorite dishes.

Dinner tonight is for my wife's birthday.

She has chosen a Taco Bar, fresh guacamole & chips followed up by a couple of frozen Peanut Butter Chocolate Chip pies.

 

I need to go make the guacamole.

Since brunch was HUGE, I just had "dinner".

 

Vanilla bean ice cream covered with REAL hickory smoked bacon bits leftover from brunch, drizzled with chocolate sauce. The pic isn't mine, but it's the closest I could find.

 

You would not believe how good this is.

Chile- hope your wife appreciated you. When my wife asks for good Mexican, I just take her to lalos. ( real nice small Mexican joint near us.

 

Nice bar. Ill have to try that on the next wife's b day. And a big bonus to me, she doesn't like guac! Time for more steak.....

Well good news I just got my new muzzle break and wood for my 12 

 

so that brings us to dinner and yea it was ramen lol

Louisville style pork ribs,

 

Season to taste ( no salt yet )

White pepper,

Onion powder,

Garlic powder,

Cayenne pepper,

Cumin

Basil

 

Cover and Bake in oven at 325 for one hour.

 

Finish on grill over Wood fire,

Apply Lowry's season salt, a bit more than you think you'll need.

 

Place on grill just as the flames settle down for a good sear on both sides. Then let the fire burn down being careful not to char for a nice sweet smoke as the wood burns down. ( this time done with Wilde cherry from my back yard)

 

Lastly, and this is the tricky part.

Apply your favorite BBQ sauce. You need just enough heat left in the fire to glaze the sauce but not burn it.

Along side my wife's famous garlic butter smashed potatoes and fresh green beans.

 

Sorry no pics on the plate, I was busy eating. :haha2:

 

Mmmmm MMM wash it down with Henry's blue boar ale.

 

Definitely on my top ten list of favorite meals.

Looks great!

 

I had baked mac n cheese with cheddar/mushroom sauce, hickory smoked bacon chunks, and topped with a sweet Italian tomato sauce.

 

YUM!

You had me at BACON.
