ChileRelleno 7,071 Posted April 19, 2016 Author Report Share Posted April 19, 2016 I had a craving for some Al Pastor but didn't have the time or ingredients to do it proper.So I improvised and it came out dang tasty for a bastardized version.It really needs the Guajillo chiles and achiote for the right flavor, and the pork needs to be sliced thinner.But nobody complained, there was prolonged silence save the sounds of satisfied eating.For my marinade I used20 oz Crushed Pineapple19 oz Red enchilada sauce7oz Chipolte chiles on Adobo sauce1 cup Brown sugar1 tbsp Cumin1 tbsp Paprika2 tbsp Sea saltPuree chipoltes with enchilada sauce, brown sugar and spices.Add pineapple and juice from the can, stir well.I marinated the pork steaks for 5 hours.I'll try 8hrs next time to see if I can get a little deeper penetration of flavor/color.Grill over high heat to get a good char.Had a huge bowl of leftover Loaded Mashed Potatos, so those got reheated.Mashed taters, bacon, caramelized onion, sour cream, butter and red pepper.Whipped up a side of Black beans, Hominy, onion and Rotel.I was forced out of the kitchen by the hungry horde and barely escaped with my own plate and the camera was left behind, so alas no money shot. 3 Quote Link to post Share on other sites

One quarter pound, (1/4 #) ultra low fat hamburger with onions and mushrooms plus a big lettuce wedge and some sliced Roma tomatoes. No dressing. Do they? New York steaks, Broccoli Rice, Crab Pasta Salad and fresh baked biscuits with butter Pan fried & deep fried Catfish, Corn & Green Beans, Saffron rice and Dinner Rolls slathered in Butter. Took the kids out catfishing at Steve's Farm catfishing ponds.We love it, makes for a great day with the kids, and mamma gets a break at home.We did a bunch of catch-n-release keeping only 3-5# fish, and took in 45#s of fish, filleted out to 18#s.Fried a mess of'em Saturday but forgot to take pics, today decided to Pan Fry a bunch and deep fry some for a picky eater.1/2cup of flourMix in the following spices2 heaping tsp Cajun Spice2 heaping tsp Seasoned Salt1 heaping tsp garlic herb mixture1 tsp garlic herb mixture1 tsp Paprika1 tsp garlic powderPan FryPat fillets dry and dredge in mixIn a large, deep skillet (preferably cast iron) add oil till about an 8th of an inch deep, getting nice and hot.Drop fillets skin side down cook till nicely colored and cooked about halfway, flip and finish cooking.Time depends on thickness.Deep FryDip fillets in milk before dredging in mix, fry at 350' till flaking. ChileRelleno 7,071 Posted August 27, 2016 Author Report Share Posted August 27, 2016 10+ large cabbage leaves, 2 lrg heads cored2# Ground beef, browned2 cups diced onion1 cup diced Red Bell pepper1 heaping tsp minced garlic2 heaping Tbsp Sun Dried Tomato in oil, minced1.5 cup Rice, cooked2 lrg Eggs, beatenEVOOSalt, Paprika, Garlic Herb mixToothpicks or cotton twine1 24oz Classico Tomato/Basil sauce3/4 stick Butter1 tsp Italian Herbs mix, 1tsp Paprika3 cups waterUse very hot water to soak & loosen the cabbage leaves, cool in cold water, shake of excess and set aside.Keep leaves whole, shave the thick part of the vein flat along it's length to allow it to roll. Don't remove vein it makes it a PITA to roll.Brown beefSaute veggies & garlicAdd veggies, EVOO and spices to beef, mix well over medium heat.Add rice and mix well again, set aside to cool.Melt butter, add sauce, spices and water, simmer on low.The sauce needs to be thin as to simmer the rolls, or it will thicken too much during cooking.Place a generous amount of filling at base of leaf, roll forward half way, fold in sides and finish rolling, secure with toothpick or tie with twine.Coat bottom of baking dish with sauce and fill with rolls.Pour remaining sauce over top of rolls, tightly cover with foil.Bake at 400' till cabbage is soft/tender to a fork.Money Shot 2 Quote Link to post Share on other sites

Yes, Spanish as in Spanish Mackerel or Spaniards slang. Two common Mackerels here on the Gulf coast, Spanish and King mackerels. ChileRelleno 7,071 Posted September 5, 2016 Author Report Share Posted September 5, 2016 (edited) Grilled Chicken, Broiled Yellow Squash with Rotel, Rice and Blueberry Muffins with Butter Spatchcock the birds and rub with EVOO. Generously rub with Sea Salt, Garlic Herb mix, Paprika and Rosemary. Grill till it starts falling apart. Halve the squashes, brush with EVOO. Dust well with Seasoned Salt and then top with Rotel. Broil on high at about the 4th rack level till squash softens, then raise to about the 2nd rack level and get a roast on the tomatoes & squash.
