ChileRelleno 7,071 Posted December 31, 2015 Report Share Posted December 31, 2015 Tonight's DinnerAsado de cerdo marinadoMarinated & grilled pork steaks4 large pork steaks16oz Spicy V8 juice, or any tomato juice1/2 cup lime or lemon juiceSea SaltChopped onion, any onion will work, I used dehydrated this time.Minced GarlicMesquite Habenero Spice MixPowdered CuminSeason steaks with dry ingredients & garlicc, add liquids, mix, marinate for 30 minutes.Grill with a good char for that smoky flavor.Remove from grill, wrap in foil and let rest for 10-15 minutes.Serve whole or sliceGood with warm tortillas and either some fresh pico de gallo or guacamoleArroz MexicanaMexican Rice1lb rice1.5 cups chopped onion1 heaping tablespoon Minced Garlic1.5 cups tomato puree, I use Rotel and puree in the blender2 cups Chicken Stock.5 cup Olive oilIn a large stock pot add olive oil, bring to high heat.Add rice and saute till opaqueAdd onion & garlic and continue to saute till rice golden brown.Add chicken stock and tomato pureeBring to boil, then lower heat to simmer, simmer 20 minutes +/-.Judías verdesGreen beansGreen beansOnion, sliced thinLots of minced garlic.25 stick of butterOlive oil, drizzel well over dishSea Salt.25 cup waterCombine as pictured, microwave on high 3-5 minutesStir well and nuke it again for another 3-5 minutes Quote Link to post Share on other sites

DLT 1,646 Posted December 31, 2015 Report Share Posted December 31, 2015 Ok, try making your rice like this. Brown your white rice in olive oil first. Not alot, maybe a tablespoon of oil. When golden brown, add about two cups of pace picante sauce, a teaspoon of minced garlic, about a quarter of a chopped onion, salt and pepper to your liking, and of course water. The chicken stock is optional. Then add a little less than two teaspoons of ground comino. Bring to a boil, then to a simmer and cover. Add water if necessary and lightly boil until done.
