I was shooting my 223 Saiga at the range today & had a reminder of how much I hate the sights on an AK. What are the options for improved sights?

You could do a peep sight in the rear. http://www.mojosights.com/ak47_sks.html
And a tritium in the front. http://www.championgunsights.com/products.asp?cat=30

buy a peep or make one...

simple thing to try if you're going peeps is to open up the notch on the stock one with a small file..

I would not mind a peep, but a forward mounted peep takes to long to center the eye in my opinion.

ACE sells a clamp on site that is kinda like a HK style ring that attaches to the front of your gas block, and your rear sight can vary vastly, depending on what setup you have on your gun, personally i like the sights from ACE as long as it doesn't get in the way of your front rail or handguard.
