that's surely a boar as his tusks are way out and you can see his pecker there. will be kinda gamey; if you smoke the sausage it will be better. now the important question is: is that your wife or daughter? i ask out of full respect; as she obviously is handy with the right kinda iron. notice my member name here as i laud her on a righteous kill !!!

About the “gamey” taste it depends how you harvest hogs, I am trying to drop them with the head shot , not let them run wounded and before cooking ,leave the meat in ice could water with little of lemon juice and vinegar for 48 hours .IMO wild hog sausage is the best sausage ,BQ or smocked tastes great ,make sure you put the right amount of pork fat with the ground meat and u GTG ‘I’ll post some pics of my cooking skills
